Everflyht Brut NV consists of 60% Chardonnay, 30 % Pinot Noir, 10% Pinot Meunier with 5% Reserve Wine added before bottling.
The appearance is star bright, pale golden in colour and with fine consistent bubbles. On the nose there are generous aromas of baked apple and red apple skin with bright lemon notes. Undertones of strawberry and raspberry are followed by complexity and depth rounding off the profile with fresh biscuit and baked shortbread. The palate offers a precise backbone and bright acidity which gives this wine an elegance and finesse. This structure is perfectly complemented by ripe red apple, pear and buttery lemon tart and a mix of red summer fruits. Bready brioche and hints of fresh biscuit form the profile edge.
The Everflyht Brut NV reflects the current estates planting which combines Pinot Noir, Chardonnay and Meunier; hand-picked from the single estate vineyard and created in a low intervention method while using steel tanks and new and old oak to bring the best from each variety and block. Fresh and generous complexity in style, this traditional method wine has been aged for 20 months on the lees bringing a robust depth with a lasting elegance to the wine.
Everflyht was founded by the Ellis family, after Ben and Sam Ellis fell in love with the wine world while visiting Napa Valley. The planted their first vines in 2016 in their Sussex site, and have consistently worked towards regenerative viticulture, including planting cover crops between vines and setting aside 3.5ha of land for biodiversity. The name ‘Everflyht’ is inspired by the six Martlets of the Sussex crest symbolising knowledge, adventure, and learning. Said to never land, these birds are ‘ever in flight’. These six Martlets make up the Everflyht feather, a symbol of adventures and innovation in wine and the wish to never settle.
