Most wines follow a formula; here, Ancre Hill follow a rhythm. They use the Entre’acte (Intermission) Méthode Ancestrale, a patient process where they blend the vibrancy of their new vintage juice with the depth of their previous base wines while fermentation is still alive.
By allowing the wine to spend six months on its lees before a gentle riddling and disgorging, they create a profile that is naturally spirited and finely textured. No heavy intervention—just a raw, honest expression of the vine that is as untamed as it is drinkable.
Ancre Hill Estates is located in the Welsh county of Monmouthshire. The 12 hectares of vineyards are perfectly positioned on south facing slopes close to the border town of Monmouth and the Wye Valley. The estate utilises traditional Biodynamic and Organic Viticultural practices to produce the best possible fruits from carefully sourced and selected varieties with excellent heritage. The wines produced at Ancre Hill express the terroir of ancient mudstone and sandstone soils, giving the wines their character and natural flavours, with no external intervention or manipulation in the winemaking process.
