“Bacchus, but not as you know it” is how Balfour’s Head Winemaker, Fegus Elias, described this latest vintage of Liberty’s Bacchus – it represents a bold step forward for English still wine. Head Winemaker Fergus Elias set out to redefine the country’s signature white grape, creating a wine of structure, texture and balance. A small portion aged in oak, the rest guided by wild fermentations, the result is a Bacchus of extraordinary character. Crisp and floral, yet with a smoky, mineral depth.
