Hattingley Valley Entice 2025

Aromatic, textured dessert wine; juicy pineapple and bright lemon curd

Pale gold in colour, this decadent dessert wine is bursting with aromatic notes of lemon zest, honeysuckle, and tropical fruits. On the palate, ripe pineapple, mangosteen, and lychee give way to layers of pink peach and bright lemon curd. Sumptuously rich and luscious yet perfectly balanced, it ends smoothly with a long, vibrant finish. For this wine, Hattingley harvest the grapes at a higher than usual sugar ripeness then freeze the fruit at minus 18 degrees for four weeks. Once the usual harvest is over, they take the frozen grapes out, put them in their press and press them extremely gently to extract the juice. The result is a very concentrated, pure fruit liquid that has high amounts of sugar. The benefit of using Bacchus is that the sugar is balanced out by a wonderful fresh acidity, therefore the wine is not cloying. It shows a lot of fragrant elderflower and ripe juicy pineapple. This delectable dessert wine is Hattingley’s take on ice wine (or Eiswein as it is known in Germany). Hattingley Valley is a family-owned business located in Hampshire. The Robinson family planted their first vines in 2008 and their modern, eco-friendly winery was completed in 2010. The vines, now covering 7 hectares, are nurtured throughout the growing year with an environmentally-sensitive approach to viticulture ensuring optimum ripeness, yield and quality of fruit.
