The vineyards of Denbies Estate are situated on the North Downs, in the town of Dorking, with its famous chalky soil, in a protected valley of south facing slopes (AONB). A total of 265 acres out of the 700 acre estate have been planted to vine, commencing in 1986. Pale gold in colour, this full-bodied wine has a fine mousse and a creamy, rich texture. Complex aromas and flavours of baked pear and rose petal are and complemented by a hint of strawberry. The balance of strawberry fruit, minerals and crisp acidity lead to a round mouthfeel and lasting finish. This Blanc de Noirs is created from hand-picked Pinot Noir from the Hillside vineyard on Denbies Estate. The 2014 spring time and summer were warm, enabling the fruit to ripen fully, build-up interesting flavours and impart complexity to the resulting wine. Whole bunches of the best Pinot Noir grown at Denbies were delicately pressed. This resulted in a premium juice that was carefully fermented at a low temperature to maintain the fruit’s premium character. Six months on lees, in tank, was followed by bottling in May 2015. It then went through secondary fermentation in the bottle and kept in the cellar, to mature, for a further 40 months.
