This luxurious wine is a refined blend of 53% Pinot Noir and 47% Meunier, meticulously hand-harvested from Everflyht’s single-estate vineyard to capture the essence of the one of the best vintages in English wine history. Aged on the lees for 20 months, it has a luminous coral pink hue and flicks of delicate orange. Both the nose and palate have sumptuous layers of ripe cherry and sun-warmed red fruits, intertwined with whispers of buttery patisserie. The profile culminates in a finish that is both sumptuous and enduring.
Everflyht was founded by the Ellis family, after Ben and Sam Ellis fell in love with the wine world while visiting Napa Valley. The planted their first vines in 2016 in their Sussex site, and have consistently worked towards regenerative viticulture, including planting cover crops between vines and setting aside 3.5ha of land for biodiversity. The name ‘Everflyht’ is inspired by the six Martlets of the Sussex crest symbolising knowledge, adventure, and learning. Said to never land, these birds are ‘ever in flight’. These six Martlets make up the Everflyht feather, a symbol of adventures and innovation in wine and the wish to never settle.
