Hattingley Valley Classic Reserve NV
Svelte, elegant, a delicate hedgerow nose with vibrant green fruit and characteristic toasty flavours
Hattingley Valley’s Classic Reserve is pale gold in colour with delicate and fine long-lasting bubbles. The beautifully complex bouquet combines aromas of green apples with creamy nougat, freshly baked brioche and delicate toasted notes from ageing in bottle. On the palate, the complexity continues with notes of soft lemon sherbet, biscuit and a subtle oak character. Refreshing and perfectly balanced, with a delightfully long finish. This NV is based on the 2019 vintage, with 12% of reserve wines that had naturally softened and developed over time in oak barrels and stainless steel tanks added before secondary fermentation to ensure the consistency and continuity of their signature style. The hand-harvested grapes were whole bunch pressed to extract top quality juice. 11% of the total blend was barrel fermented in old white Burgundy barrels and partial malolactic fermentation took place in order to soften the wine’s natural acidity. After 4 years ageing on lees in a bottle to add roundness and character, the wine was disgorged with a light dosage of 5 g/L.
Hattingley Valley is a family-owned business located in Hampshire specialising in premium English sparkling wines. Alongside Emma Rice the Robinson family planned the modern, eco-friendly winery in Wield that was completed in 2010. It uses the latest technology and equipment from continental Europe, has sophisticated waste disposal facilities and was the first UK winery to adopt solar power. The vines are nurtured throughout the growing year with an environmentally-sensitive approach to viticulture ensuring optimum ripeness, yield and quality of fruit.
