Everflyht Blanc de Noirs 2020
A fruit forward profile of ripe strawberries giving way to complex buttery pastry notes with a lasting warm finish of spice
Everflyht Blanc de Noirs 2020 is a blend of Pinot Noir and Meunier; hand-picked from Everflyht’s single estate vineyard. The Pinot Meunier and Pinot Noir were pressed on consecutive days, with the cuvee and taille of each press split separately between barrel and steel tanks for the 1st fermentation. The wine is made up of 40% new and old French oak barrels with the wines being aged for 7 months before been blended and bottled in July. The wine was then aged on the lees for 33 months. The wine has a delicate golden straw colour and is complex in style with a fruit forward profile of ripe strawberries giving way to complex buttery pastry notes with a lasting warm finish of spice.
Everflyht was founded by the Ellis family, after Ben and Sam Ellis fell in love with the wine world while visiting Napa Valley. The planted their first vines in 2016 in their Sussex site, and have consistently worked towards regenerative viticulture, including planting cover crops between vines and setting aside 3.5ha of land for biodiversity. The name ‘Everflyht’ is inspired by the six Martlets of the Sussex crest symbolising knowledge, adventure, and learning. Said to never land, these birds are ‘ever in flight’. These six Martlets make up the Everflyht feather, a symbol of adventures and innovation in wine and the wish to never settle.
