This unique, still, white Pinot Meunier displays sweet and savoury aromas of poached winter fruit with balsamic nuances and a delicious creamy mouth-feel. Pinot Meunier grapes (clones 798 & 799) from the Roman Road vineyard were hand picked and carefully whole bunch pressed. The juice settled for 48 hours before racking, underwent a long, slow primary fermentation using aromatic yeasts and full malolactic fermentation. The wine rested on fine lees to build palate weight before bottling in spring 2020.
