A pale gold colour with a stream of fine bubbles. The nose is clean and pronounced with complex layers. Gala apple and concorde pear aromas are strongly backed up with toasted brioche and butter. There is a delicate hint of cut grass and hay which is an appealing undertone. The palate shows complex layers of orchard fruit with lemon pith and a citrus acidity that carries the finish on this wine. Some confected apple notes come through as the wine opens up in the glass. A welcomed touch of salinity and freshly baked brown bread, along with a butteriness add more dimensions to this wine.
The cuvée is a blend of 75% Chardonnay, 15% Pinot Noir and 10% Pinot Meunier. The grapes were picked in October 2018 and gently pressed, whole bunch. Press fractions were carefully separated and left to naturally settle for 24 hours. Primary fermentation took place in a combination of stainless steel tanks and used oak barrels, followed by complete malolactic fermentation. Following 7 months of élevage, the final blend was bottled and left to age on lees for a minimum of 18 months. At disgorgement the wine received 1.5 g/L dosage and was aged for at least three months under cork.
All fruit for this wine was sourced from Langham’s single site in rural Dorset. The Crawthorne vineyard consists of 12 hectares planted to Chardonnay, Pinot Noir and Pinot Meunier and is located on a sheltered south facing slope at 80-100 metres above sea level. The soil consists of a shallow clay loam, containing flint, over deep Cretaceous chalk.
