Hattingley Valley’s first Demi-Sec has a lovely bronze hue with rich caramelised apple and blackberry crumble aromas. Notes of brown sugar, ripe red fruit and pastry on the palate, it has a sweetness that complements the classic English acidity to create a perfectly balanced wine. This is all wrapped up with a long and intense finish. A carefully selected blend from the finest parcels of Pinot Noir, Pinot Meunier and Pinot Précoce. Approximately 10% of the blend was fermented in old Burgundy barrels and partial malolactic fermentation took place to provide a round and creamy structure. The wine aged on lees for five months in barrel and a further three years in bottle before disgorging with 38 g/L dosage. Hattingley Valley uses the latest technology and equipment from continental Europe, has sophisticated waste disposal facilities and was the first UK winery to adopt solar power. The vines are nurtured throughout the growing year with an environmentally-sensitive approach to viticulture ensuring optimum ripeness, yield and quality of fruit.
