Simpsons Wine Estate Rabbit Hole Pinot Noir 2024
Mulberry, violet and sweet spice aromas, with ripe, red berry flavours and hints of forest floor.
Exuding a true sense of place, this still Pinot Noir is created from fruit specifically selected for its maturity and concentration. This wine has a wonderful ruby / garnet hue and displays notes of fresh cassis and rich cocoa, married with sweet spice aromas. On the palate there are ripe, Black Forest notes interwoven with complex nuances of warm sandalwood and vanilla. It is perfectly balanced with an elegant structure and silky tannins, leading to a lingering, textured finish.
A blend of low yielding Burgundian Pinot Noir clones were picked during the 2024 harvest. Once in tank, the grapes were gently pumped over twice a day for a period of two weeks. Once the primary fermentation was complete, the wine was drained off its skins into old (80%) and new (20%) French (75%) and American (25%) oak barrels, where it underwent malolactic fermentation. After six months ageing in barrels, the wine was lightly filtered and bottled in late spring 2024.
