Inspired by Clidda Gawr, a local Welsh giant said to have lived in a fortress atop Clytha Hill near our vineyard, this Col Fondo sparkling wine captures both legend and vineyard character. Unfiltered and undergoing secondary fermentation in bottle, it delivers a subtle spritz and natural cloudiness that reflects its artisanal production.
Crafted from a blend of aromatic white grape varieties, Clidda Gawr offers lively aromas of elderflower, passionfruit, and gentle yeasty notes. Drink once settled for fresh, floral flavours, or awaken the giant with a gentle shake to distribute the sediment, revealing extra toasty, brioche depth.
On the nose, expect lifted passion fruit aromatics with hints of wildflower and jasmine. The palate reveals flavours of elderflower, ripe pear and stone fruit, supported by bright acidity and a clean mineral finish. The result is a beautifully structured dry Welsh white wine with energy and precision.
