Hattingley Valley Entice Dessert Wine

Dessert wine? From England? How do you do that? Many dessert wines from around the world are simply left on the vine for longer periods to accumulate more sugar and in the case of ice wines, they are left out until the grapes are frozen. In our climate, this is Hattingley’s take on an ice wine style, with their Bacchus grapes harvested at extra sugar-ripeness then frozen for a period of weeks before gently pressing to obtain a concentrated liquid. The benefit of using Bacchus is that the sugar is balanced out by a wonderful fresh acidity, therefore the wine is not cloying.
This decadent dessert bursts with aromas of honeysuckle, lemon and elderflower. The palate follows through with raw honey, lemon curd and tarte tatin. Luscious and full-bodied with a lingering finish.
Hattingley Valley is a family-owned business located in Hampshire. The Robinson family planted their first vines in 2008 and their modern, eco-friendly winery was completed in 2010. The vines, now covering 7 hectares, are nurtured throughout the growing year with an environmentally-sensitive approach to viticulture ensuring optimum ripeness, yield and quality of fruit.
