The Wiston Estate Library Collection presents a series of limited-edition releases from their cellar which celebrate the wines’ ability to age. These are a series of unique wines which showcase the quality which English Sparkling Wines can achieve. The additional ageing in Wiston’s cellars imparts wonderful depth and complexity to the wines, bringing richness, intensity, and a wonderfully long finish. The extended time before release has given the wines layers of evolved aroma and flavour such as truffle, honey, baked apricots, toasted brioche and crème caramel which, paired with the trademark refreshing acidity, makes for a delicious combination.
2010 was a benchmark year at Wiston: a vintage of ideal balance between yield & ripeness of fruit, which produced stunningly complex and elegant wines. Their single vineyard, single vintage, single variety (100% Chardonnay) Blanc de Blancs has layers of honey, truffle, lemon zest, Danish pastry and crushed oyster shells, with a sublime finish that goes on and on.
Winemaking: The Chardonnay grapes were pressed in a traditional Coquard press, then half the juice was fermented in stainless steel tanks and half in old oak barrels. The still wine was rested on its lees for several months until springtime, bringing additional complexity and structure. Due to the ideal ripeness of the fruit malolactic fermentation was blocked leaving the wine with natural malic ‘energy’. Bottling took place in late spring of 2011, and then secondary fermentation and lees ageing followed. This Library Collection release was disgorged in November 2018 and has since rested on cork.
A decadent treat to enjoy on its own, or a delicious match with indulgent shellfish such as oysters, scallops or lobster, or equally good with Sussex cheeses such as Mayfield or Tunworth. Serve chilled in a tulip shaped wine glass. Ready to drink now, will continue to age and evolve. Keep the bottles horizontally to avoid the cork drying out, in a cool, dark place.
Wiston Estate has been in the hands of the Goring family since 1743 and is presided over today by Harry and Pip Goring. The estate is managed by their son Richard and both he and his wife, Kirsty, are now involved in the day to day running of the vineyard and winery. It was Pip’s long-held conviction that the estate held the potential to grow high quality grapes. The 16-acre vineyard, planted in 2006, was the fruit of her dream and tenacity. Wiston Estate is a family venture, small in scale, impressive in aspiration and unrelenting in pursuit of quality.
