Simpsons Wine Estate Gravel Castle Chardonnay 2024
Citrus aromas with tropical fruit flavours and a smooth texture
Made from exclusively estate grown grapes, the Gravel Castle Chardonnay displays a precise, chalky minerality, with a touch of salinity and notes of lemon peel and orchard fruit. It has a lively, refreshing palate, with zesty lime and delicate white melon flavours, and finishes with a finely structured, creamy mouthfeel.
Burgundian Chardonnay clones were carefully harvested at optimal ripeness from various parcels from Simpsons’ vineyards. The grapes were then gently pressed, and the juice was cold settled for 24 hours. Once racked, the juice was inoculated with aromatic yeasts. The wine underwent partial malolactic fermentation to soften the acidity and increase mouthfeel and was aged on fine yeast lees and stirred twice a week to add texture prior to bottling in spring 2025.
