You can make dessert wines a number of ways, and this luscious wine is created in one of the simplest – just stop the fermentation of really ripe grapes when there is still sugar left in the juice. This method may not deliver the complexing (that’s a real verb, honest) nuances that Noble Rot does, but on the other hand, it showcases the varietal characteristics, with tropical fruits to the fore – mango, melon and peach in a beautiful melange. The Three Choirs Vineyard is south facing on sandy loam soil with a GDC trellis system with 800 vines per acre or 2000 per hectare. Most vines are 10-20 years old, all grapes are hand-picked. The 2018 harvest produced an excellent sized crop with good ripeness levels and most importantly a good level of crisp acidity. The wine required minimum intervention in the winery and produced a wine of typical varietal character.
