Made by the traditional method, that is, the same way as Champagne. Regent is a red grape with a red juice, and by gentle pressing Three Choirs extracted very pure, clean juice well suited to sparkling wine. The wine was aged on the lees for 3 years. It has good berry fruit character with balanced acidity. It is an off dry style, with the bitter cherry and cranberry fruit character balanced with a degree of sweetness. It is made at the Three Choirs Vineyard, which is south facing on sandy loam soil with a GDC trellis system with 800 vines per acre or 2000 per hectare. Most vines are 10-20 years old, and all grapes are hand-picked.
