Rich and spicy with aromas of bergamot and Seville orange. On the palate one can detect citrus, spices and bitters. A blend of 31 herbs and spices, many picked in and around Knightor, were used for their Dry Vermouth. Some of the Classic herbs were used such as Wormwood [Artemisia absinthium], Green Cardamom [Elettaria cardamomum], Cinchona [Cinchona officinalis] and Liquorice [Glycyrrhiza glabra], plus some more unusual and herein lies the key to the delicate elegance and complexity. The herbs were first infused in a fruity Eau de Vie, distilled from their own grape skins. After a short steeping period, the herb infusion was blended with one of their reserve sparkling base English wines and allowed to mature and integrate for a short period before bottling.
