This elegant Rosé has a subtle delicate salmon hue and a soft mousse, with bright red fruit and summer berry aromas. On the palate, delicious strawberry coulis flavours, creamy texture and fine toasty notes. A harmonious wine, with extraordinary depth, freshness and perfectly balanced acidity. The Pinot Noir and Pinot Meunier grapes were handpicked and gently whole-bunch pressed. Approximately 7% of the blend was fermented in 4-5 year old Burgundy barrels, adding a lovely texture and richness to the wine, and partial malolactic fermentation took place in order to soften the wine’s natural acidity. The wine spent 8 months in tank and barrel before tirage where 5% of Pinot Précoce (having been vinified as a still red) was added to enhance colour, body and flavour. The wine undergoes a second fermentation in bottle and ageing on its lees for 24 months before disgorging. Hattingley Valley uses the latest technology and equipment from continental Europe, has sophisticated waste disposal facilities and was the first UK winery to adopt solar power. The vines are nurtured throughout the growing year with an environmentally-sensitive approach to viticulture ensuring optimum ripeness, yield and quality of fruit.
