A precise and fresh English Sparkling Wine that wears its four years on lees lightly – ripe green apple, lime and shortbread are delivered on a crisp, fine mousse. Danebury’s Cossack vintage sparkling wine is made from a blend of Auxerrois Blanc and Pinot Gris. Auxerrois Blanc is a cross between Gouais Blanc and Pinot Noir, which have the same ancestry as Chardonnay. It is made using the traditional bottle fermentation method and aged for at least four years on its lees. Danebury Vineyards is a privately owned estate located near Stockbridge, in the heart of Hampshire, on the paddocks of what was a famous nineteenth-century racehorse training yard. The name Cossack is taken from the Danebury trained 1847 Epsom Derby winner. The vineyards cover seven acres of sheltered, south-facing fields on chalk and flint-stone soil. Their first vines were planted in 1988; the family has chosen to focus on limited production, following organic principles, which is reflected in the quality of the wine.
