Chapel Down Sparkling Bacchus 2018 is characterised by aromas of pineapple, grapefruit and elderflower. The palate is tropical and floral with a crisp texture and a refreshing finish. Fruit is sourced from vineyards in Kent, Sussex and Essex. Grapes are grown predominantly on single and double guyot pruning systems, on varied soils including, chalk, clay and loam soils. Grapes were hand-picked and whole-bunch pressed in September and October 2018. Cool fermentation in stainless steel with no malolactic fermentation helps to retain the freshness of this style. Following clarification, the wine was carbonated at bottling in April 2019.
