Stylish, balanced wine with ripe stone fruit matched with lively acidity

A very stylish, single vintage, traditional method, quality sparkling wine. Lots of stone fruit character with notes of honey and pear. A good balance of sweetness and acidity with a lovely length. Pinot Noir and Pinot Meunier grapes were whole bunch pressed and fermented in stainless steel tank for around 14 days prior to undergoing malolactic fermentation. Second fermentation in the bottle using the 18-2007 Champagne yeast. Aged for 15 months prior to disgorgement. The Bolney Wine Estate is a haven for wildlife, and through its traditional production methods and cultural practices, avidly promotes and maintains soil health, fertility and stability in its vineyards. The sandstone soils are some of the best in the country, providing the ideal setting to grow vines.
