Born from the idea of doing something new with something old, this wine uses the seven traditional grape varieties of Champagne. These varieties are seldom found as a blend and are nearly unheard of for a still wine. Sequential inoculations of three carefully selected yeasts, and in tank bâtonnage, results in an intense nose, with hints of fresh Kentish fruit and spice, and a unctuous and complex palate. The wines come from the 400-acre estate in Kent of the Balfour-Lynns, enveloped in ancient oak woodland. To turn his dream into reality Balfour-Lynn was helped by Stephen Skelton MW using his extensive experience with English vineyards. This wine is part of the Winemaker’s Collection; the Septered Isle is the brainchild of Head Winemaker Fergus Elias.
