Produced only in the best vintages. 2014 was an exceptional year for Chardonnay. The Chardonnay grapes, for this single-vineyard wine, came from Champagne clones in their Old 8 Acre Vineyard, planted in 2007. The grapes were hand-picked from 12th to 15th October 2014. Fermented in specially designed stainless steel tanks, at a cool 16°C to guarantee clean, pure characters and complexity. This wine undergoes a secondary fermentation in bottle, followed by a minimum 30 months ageing on the lees. Disgorged to order, ensuring freshness and enhancing toasty, brioche tones. Appearance: Brilliant white gold, with a fine sustained bead & mousse. Nose: Clean and fresh with a touch of autolysis, white pepper and dried herbs. Palate: Vibrant and increasingly complex. Dry with a steely lime acidity. Citrus and apple notes precede the characteristic slightly salty Hush Heath finish.
